My first try at the world of blogging. I am married for 37 years. Mom to 2, Grandmother to 4. I am an avid reader, love to cross-stitch and trying to learn how to crochet.

My reading varies .I love YA, paranormal, Cozy mysteries, mystery/thrillers, and sometimes chick-lit. I am slowly posting some of my favorite authors. I add as I have time.

About 6 years ago I was having health issues and found out I was gluten/dairy intolerant. Then about 2 years ago I found out I was also allergic to corn. I now have to read everything to make sure there is no hidden corn in the foods. Corn syrup is the biggest problem when searching for foods I can eat. I do most of my own baking to make sure my food is ok for me. I have discovered a whole new world of foods I thought I would never try. I now have a love of Tofu, Hummus and Soy milk along with other items. As I work on my Gluten free recipes I will share them here.

                          Tofu Salad

1 package of Extra Firm Tofu
1/4 cup Mayo (or how ever much needed t moisten to how you like it)
Dill weed to taste
minced Onion(dry or fresh) To taste
celery seed to taste usually 1/4 tsp.
1/2 tsp mustard
Mash tofu like you would eggs. I like it well mashed not too chunky. Mix all ingredients together and let salad get cold. I serve on rice crackers or put on romaine lettuce leaves and roll up like a wrap.
